Only rice cultivated from traditional heirloom Chettivirippu and Cheruvirippu Pokkali seeds in the fully organic clay farms of coastal Ernakulam, Alappuzha and Thrissur districts are classified and authenticated as Pokkali Rice.
Traditionally, the harvested seeds (with thick shell) are boiled in a classic Kerala alloy kettle until the shell begins to soften/crack and the red grains become visible. This is then cooled, sun dried, milled and sifted to extract the rice grains at the desired level of the nutritious red grain cover/skin. Finer milling results in lighter red cover grains.
Harvested seeds are also milled without boiling to extract broken rice and create flour used in icoinc Kerala culinary delicacies such as Puttu, Idli, Dosa, Idiyappam, Uthappam, Aval, Avalsupodi and Desserts.
